A few things from my haul are worth sharing. We got far more than this, but these are some new favorites we won’t be running out of any time soon. That’s what I love about shopping at Costco; we shop for two weeks instead of one, and we don’t run out of kitchen staples like cooking oils, spices, nuts/seeds, and baking supplies. The only thing I may restock in between the two weeks is produce because I eat more vegetables than anyone I know. These are a few favorites.
Three of these for $21? Don’t mind if I do. It’s not grass-fed, but it is organic. I’m thinking meat sauce for zoodles, a chocolate chili, and stuffed peppers.
Um, yes. I had a tub of coconut oil this size before, and when I ran out, I resumed to purchasing the small jars at Aldi. It was time to bite the bullet and get this massive tub for just $15. It’s going to good use. We use it in cooking, raw desserts, coffee, and as a moisturizer.
Two monstrous bottles of Frank’s cost less than $6 at Costco. Dreams do come true. Buffalo chicken is a thing and it’s for lunch every day, y’all.
I never buy cheese. Things are changing around here. Kerrygold is a steal at Costco, and this big block gets a quick grate over nearly every meal as of late. Dairy is still a novelty to me at the moment. Doing it right with some Kerrygold Dubliner.
Greek yogurt is life. I’m reluctant to make my own in the Instant Pot despite its easy yogurt function, but soon enough. For now, Costco is making my daily life a whole lot easier with this deal. I go through 3-4 containers per week, especially when I don’t feel like cooking.
Chia seeds are kind of cool. I never buy them, but having the option to purchase a big bag at a good price made me want to stock up. I’m using them in my oats to thicken them and to make chia seed pudding with coconut milk.
And naturally, we got bacon. We’ve been talking about it for weeks, but we always manage to forget it. Two packages of these cost roughly $12. Bacon on everything. It’s good and it’s good for you Don’t even try and tell me it isn’t.
Dates. Nature’s candy. I tend not to buy these because they’re as dangerous as any other candy and they tend to disappear WAY too fast. Alas, sometimes, I need a treat! These are great to make my “power balls” with which are like brownies, only healthier. You can find the recipe on the blog!
These are a batch cooking staple. I cook up 3-4 at once and use them throughout the week. Already cooked, sweet potatoes are amazing for breakfast hash, mashed up with some butter and cinnamon, or stuffed with shredded chicken, cheese, and hot sauce. Speaking of chicken…
Costco sells whole chickens by the pairs, and they are incredibly cheap. While I like to avoid buying commercial meat, sometimes, budget trumps all! That is why I shop at Costco after all. They have plenty of organic foods for good prices, but two whole chickens cost $13! This makes it easy to eat healthy and save money.
Finally, I love to get a big batch of apples and tomatoes. I used this dozen apples to make applesauce in the Instant Pot which took all of TEN minutes. Amazing, right? And these Campari tomatoes always taste fresh – the way tomatoes should, even when they’re not technically in season. I love to make a quick Caprese with balsamic, EVOO, Italian seasoning and fresh mozzarella.
